It all started almost 40 years ago in the back room of a Parisian delicatessen.

Today, his spirit lives on... in the heart of Languedoc-Roussillon.


Inherited from an uncle who was a master jam maker, we have kept this artisanal cooking in a cauldron, the insatiable creation of associations of tastes, the preservation of textures, the flavours of hand-picked ingredients. 


The passion fruit is the fruit of the passion-flower, a plant from South America, introduced in Europe in the 16th century. The fruit rind is not edible. The pulp is usually green/pink, juicy, sweet, acidic and very flavoursome.


Coconut is the fruit of the coconut tree, a tree that grows between the Tropic of Cancer and the Tropic of Capricorn. Coconuts fall at maturity.


The inside of the fruit is coated with 1 to 2 cm of white pulp, called copra.


The centre of the nut is hollow, filled with a sweet clear liquid: the coconut water. This liquid turns into pulp as it ripens
