It all started almost 40 years ago in the back room of a Parisian delicatessen.
Today, his spirit lives on... in the heart of Languedoc-Roussillon.
Inherited from an uncle who was a master jam maker, we have kept this artisanal cooking in a cauldron, the insatiable creation of associations of tastes, the preservation of textures, the flavours of hand-picked ingredients.
The black fig we use, known as Bourjassotte or Sollis Fig, is of outstanding quality. Over the years, we have built a bill of specifications with a producer from Provence.
This guarantees a perfect ripeness of the fruit by selective harvesting. Every second or third day during the harvest, trees are inspected to prevent the mix of green, overripe and conforming fruit.
The outcome is a jam with a quality taste approved by all our customers in France and abroad. A major best seller!
