It all started almost 40 years ago in the back room of a Parisian delicatessen.
Today, his spirit lives on... in the heart of Languedoc-Roussillon.
Inherited from an uncle who was a master jam maker, we have kept this artisanal cooking in a cauldron, the insatiable creation of associations of tastes, the preservation of textures, the flavours of hand-picked ingredients.
The banana is the fruit of the banana tree, a giant herbaceous plant whose cultivation goes back 5000 years.
It is considered in some regions as an exotic fruit or a dessert, and in others as a staple food (cooking banana).
For this recipe, we use the Canvedish variety with a little rum to replicatethe exact taste of the banana that you could flambe at home.
To be eaten as is or on crepes.
